The inevitable solution for righting-moment dominant sailing performance in a monohull. This design has bitten the bullet, everyone else is just licking around the edges.

The big surprise is how long it took to get here.
That bulbous thing was so intermediate. Like, scow the bastard!

I wonder what would happen if they hollowed out the middle underbelly of the boat and just let is sail on what's left on each side of the hull.

You mean like the Vortex sailing dinghy, designed by Jo Richards? Sailboat of the year in 2000.

The Mini 6.5 rules are such that you can’t design a tunnel hull, and the freeboard restrictions means that a mini 6.5 scow ends up looking like a bathtub.

There was a hull shape suggested in one of the first interpretation requests in the VO70 era of a big version of this, but it wasn’t permitted. I will try and dig it out.

AS Sidecar points out, the biggest constraints are usually the rules.
But in this case, considering the preponderance of downwind in the transatlantic, it is amazing how conservative the design evolution has actually been. Then again humans are good at evolution; not so good at revolution.

To answer the original “what am I?” question.  Based on the location of this thread, someone who is regretting starting “short handed anarchy”.

OK-- just put the correct hydrofoils on it.  Done.  The Hobie monocat was just WAY too heavy, fiberglass.   IF CARBON HAD BEEN AVAILABLE? .......The new UFO would be longer.  Ask Steve. who designed the new UFO.  It would probably fly as well as my Cal Fuller wooden A-cat flying on SP foils in 2001.  See my thumbnail????
