Whenever we engage the AC1 unit, all the electronics drop out and reboots. Is it possible that the electric drive in the hydraulic ram is shorting out periodically to cause this? This has my head scratching.

Which system do you have on board : h2000 or h3000
Are you sure about the reset ? Only reset THE pilot parameters i presume ?
Could be the fuse. Tube fuse on THE red wires.

What do you mean reset - do you mean it power-cycles the instruments? If so, sounds to me like you're powering the auto pilot drive from the instrument power source and when the pilot tries to move the rudder, the power sag turns everything off before the circuit breaker blows.
It would really help if you could explain what you mean by "engage the AC1" and what you mean by "reset".

I should of written that it was a acp1 computer unit attached to a H2000 system, circa 1998. This setup has been working without any wiring changes since then. When we press the comps button on the pilot display to turn on the autopilot, there seems to be periodic voltage dropouts that are low enough to cause all the electronics to turn off. Some will turn back on so it has the appearance of rebooting.

Seen it before with a Raymarine set up, and the problem was a short being created by corroded wiring. Engaging the ram will typically increase the draw, but should not do so to that degree.
