I do a bottle of Sheep Dip single malt for sailmakers and a Leatherman tool for the jimmys.
I bet you get great service from them in the future! Even a six pack from time to time goes a long way in keeping the troops happy on the loft floor, and they won't forget that the next time your sails come in.
I would also bet you folks who believe saying thanks to your sail makers, riggers, jigs, etc is above what you owe anyone will continue to get basic levels of service from them. It doesn't take a phd in psychology to understand this. If you appreciate anyone providing a service for you (be it a sail maker, a mechanic changing the oil in your car, the person making your coffee at Starbucks, building your team sandwiches at subway, etc...) they are more likely to remember you as one of the good ones, and will be more willing to go out of their way to help you in the future. I'm not saying take the Starbucks girls a six rack, I'm sure they would rather a couple bucks in the tip jar. But you should get the point. I used to get $20 best buy gift cards for the morning Starbucks girls, and the lunch time subway team, as an Xmas gift, and that went a LONG way.

On time
It's really that fucking easy...
Sure. If my sail was on time. If the rigger was on time. I don't understand why this particular industry thinks habitual lateness is acceptable. Prompt service, prompt payment.

They may not mention my name when they call the "Jimmy" (whatever TF that is) but I am satisfied that I am doing well by them and don't need the recognition.
