If you like skiing, Ellicottville is a great little ski town - two excellent ski areas, both with many sailors. Holiday Valley is the big, almost giant, public area. Holimont is a private club - with maybe the best made man and groomed snow this side of Deer Valley. Tons of sailors there, and not hard to get a ticket - open to the public on weekdays.
Chautauqua Lake is not that far from E'ville. In fact, if you were being transferred to, and working in E'ville, and your preference is sailing, I'd look into living on Chautauqua Lake.
E-scows at the south end of the lake, decent fleet. Chautauqua Lake YC - nice place. E-Scow Nationals there this year.
C-Scows at the upper end of the lake - no real club, just a paper organization, but they have about 20 boats that actively race.
Superb junior facility at the Chautauqua Institute - the John R. Turney Sailing Center - teaches something like 2,500 people a year (not all kids, but that is the primary mission).
For J-22's, big fleet at the Buffalo YC - usually 20+ on Tuesday nights. 53 boats for the summer regatta last year. NA's at Buffalo YC in '10.

Peter pretty much hit the nail on the head. Scows, Lightnings, and maybe even Catalina 22s are sailed at Chautauqua Lake Yacht Club in Lakewood, NY approx. 45 mins away. J22s are sailed on Tues and PHRF boats on Weds in Buffalo approx. 60 mins away.
E'ville is becoming a 4 season town. Skiing in the winter and golf/swimming in the summer. The village itself is pretty expensive (housing-wise) and gets pretty rural 10-15 mins in any direction. Depending on how long you want to live there, you may be better off renting than buying. The town is expensive as many Canadians own chalets (more demand than supply). Believe it or not, the boom or bust with E'ville depends on the strength of the Canadian $ to the US $. Right now, both currencies are valued at about par. Toronto is approx. 3 hours away.
As for many SAers, we live in Orchard Park. 40 mins North of the slopes in E'ville and 20 mins South of Buffalo Yacht Club. We get the best of both worlds; good schools, suburban neighborhoods, etc.
If you do take the job, LZ will become your best friend.

He visits Holiday Valley at least twice each year. Good luck with your decision.
