I cant get my head around the whole boat design of probably all the boats being too fragile for a round the world race. Surely building a boat that is 500kg heavier would be faster overall if you did not have to back off so much. (They are probably caring 100kg of carbon repair kit anyway)
I think on any cruising boat the boards up thing would not do much at all. A light round hull day boat maybe but why would you try and get the boat to slip sideways down a wave anyway? The rudders are going to stop the stern from side slipping so all that will happen is the boat will...
11th Hour have done an amazing job IMHO fixed rudder, fixed main, fixed crack in bow, hoisted main to full height and now sailing 3nm per 4 hours faster than the others

Easing the traveller is like a fine tune of the main. If you want to depower the boat very quickly to prevent a capsize you must dump the main fully. Exactly the same as say a F18 beachcat. You work the traveller to keep the boat going but if you get overpowered dumping the traveller...
looking at the wind is there any reason that that 11th Hour can not swing past Stewart Island and pick up a couple of rudders from a power boat and keep going? Would not even slow them down much.
just looking at these boats flying along I wonder why they dont make them more like the Americas cup boats. Less drag and the hull would be stronger(Less big flat panels)
Generally the crane load cell will not be accurate enough.
Hire a inline cell of the rough weight of the boat and put it on the crane hook.(plenty of companies do this)
All our OMR racing weights are done this way.
The other option is hire 4 cells connected to the one readout and put the boat on...
A couple of points which may or may not help.
I am a big fan of Garmin chartplotters(and we have had Raymarine and B&G on board at the same time but the Garmin is easier to read and use.
A 150m2 code 0 is the go to sail for cruising. Faster when under 5kn TWS and less scary over 15kn.

My instinct says that Maserati has been able to reduce their reaching sail size because when they are foiling they can generate more apparent etc etc The foiling penalty must be small.
Interesting the Gunboat 60 appears to go up wind in a high pointing mode matching angles with those top 55' racing monos. Not sure if they have worked out that that is the best VMG or she is being sailed by a bunch of mono sailors.
On the other hand Tosca is going down wind at around 140 TWA...
That gunboat 68 is one very fast cruising boat!!!

I think the squaretop jib was choking simply because there was not enough wind to hold the battens up against gravity. I guess you could make a couple of carbon foam battens for the head or reduce the head size...
