You can't stay on the crest upwind, and it would in general be either impossible or slow downwind because unless the waves are moving at your max VMG you'd either be unable to keep up or have to slow down to stay on them (ok the waves might not be going directly downwind so you can sail along...

Which seems odd. Simulators are great, but they are by definition a simplification of the real world environment. F1 simulators are more mature than AC ones and yet can miss something (see Mercedes this year, or other team in other years). And they do actual car testing to identify issues...
