My first attempt at a filet. Seen it done, never did it myself. Regular charcoal with orange wood chunks. I got the fire a little too close at the end. Good but I've had better and will do better next time.
Filets are wonderful except for the complete lack of flavor or fat. So actually pretty lame. Marinade added flavor and bearnaise sauce added fat.
It added to the confusion when I took the filet inside and confidently told my mom that my wife had made a wonderful bearnaise sauce.Bear fat?! Does that add to the flavor?
Wrap it in bacon like the old Beef Country used to do.![]()

Did the grinding and stuffing at a friends. I keep my smoker at the inlaws. Overnight at my place on the enclosed patio in between. If you've never driven a car with a dozen kolbasz hanging from a dowel between the back windows you don't know what you're missing.
First pic is a Husqvarna cast iron sausage stuffer. For those that do know shit about tools, it's a work of art.
