Snowbirding.. Left grill in CO for some stupid reason, so now I am down to a janky oven, 2 burners on an ancient electric stove my su-vide and an air frier... Bought a $50 little webber for brats et all, but omg, Charcoal sucks.... :). Still learning that one. Su vide is now my go to. Cast iron pan to sear. Made enchiladas out of a 24 hr chuck roast that were divine $9... Flank steak, ribs, tenderloin, chicken breasts. Basically everything goes in that damn thing... And with the price of protein just going through the roof. It is nice to set it and forget it for a few hours instead of slaving away...

the way we do pigs, if you didn't have a pig cooker, is built the pit with concrete blocks about 2 high was good, three sided, we/s throw the pig onto some steel fencing and then run poles through the fencing so you could flip the pig on each side(like a stretcher) ... once the fire was going and the pig down, we'd throw corrugated roofing over the top and on the open side to capture the heat better.. basting was done with vinegar mixed with red pepper flakes.. yeah about 8 to 12 hours cook time... a keg of beer was always necessary....


went up to Ralaigh with my roommate , his friend had a dedicated cooker that was trailer.. that thing could do about two whole pigs in about 4 hours..

When I was working we had a Samoan church in our first due. A couple times a year they’d do a pig in the ground behind the church. They always forgot to get a permit for the fire so we’d have to drive over and “counsel” them on getting a permit first. We never issued them a citation though…..and they always invited us to the feast. We figured it was a fair trade…….
