I don't think anyone has addressed what I think is the OP's main point

None of the suggestions would go under and most would be hard to go over...
Except for the OP even stated that a Laser or Sunfish is the standard and didn't say anything about how they wouldn't work so I think that everybody's suggestions are just fine.

I'd look at the Rocket by Fulcrum as others have stated. It's a nice upgrade from the Sunfish while building on the same idea and much lighter.

A Hobie Adventure Island might be a good choice. It sails pretty well, can be lifted by hand over the guardrail, and with some haka benches and/or tramps installed, can sail an adult and a few kids. Pre 2015 models are less capable sailors but more capable kayaks, and a little lighter. Post 2015 models have a much better seat, much more righting moment. They are real sailboats- very versatile.
