In case you think I am some kind of heathen, I have no problem spending $35.00 a pound for genuine Parmigiano Reggiano aged for 72 months, or twice that for the one aged for 100 months. And $100.00 for 100 ml of well aged balsamic vinegar to drizzle on it. I also love genuine Emmentaler cheese from Switzerland, it goes for about $14.00 a pound here.
