At my wife's urging, I've been eating beets to increase running endurance. She also noted other endurance has improved. Heh-heh.

Beet salad - course grate half a large beet, course grate an equal amount of fresh pineapple, fine grate a tablespoon of ginger root. Stir ingredients. Serve in a small bowl, or eat a tablespoon or three daily for the best woodies and stamina. This recipe also is a favorite of those who don't like beets.

I love pickled beets but have avoided them because they are high in sugar and my labs are always on the threshold of my doctor prescribing and I don’t want to go there if I can help it.

I love pickled beets but have avoided them because they are high in sugar and my labs are always on the threshold of my doctor prescribing and I don’t want to go there if I can help it.
I've loved pickled beets since my childhood. Regular beets, not so much, though I tolerate them and eat them. The beet salad is only made once a month, but doesn't last many days in the refer.

I had hyper blood pressure. After my Doc said, I'd have to go on blood pressure medicine and for the rest of my life. I said, I can't reduce it by quitting alcohol, exercising and by diet. He said, No you'll be on blood pressure meds the rest of your life, besides most people can't hold to such a regime.

So put myself on the Dash diet that evening. Quite drinking and alcohol, started exercising more and taking two half hour walks a day. My wife also put me on a juicing regime, started making various vegetable and fruit juices specifically for me. The juicing beet greens with apple and celery, which reduced my BP by 35+ within a couple days. Within a month I was maintaining a healthy blood pressure.

Have stuck to healthy diet and exercise since then. Changed my Doc to an ex-Navy Doc four years ago, who was on board with a healthy diet and exercise.

Another benefit of the Dash diet reduces sugar level elevations. One doesn't have to stay on the Dash diet forever. I went from the Dash diet to the Med Diet inside of three months, then to the MIND diet within six months.
