It's a lot like raccoon, but there's more of it. People I've known who've gone to places like PNG and partaken of "long pig" say it's not unlike human flesh in texture, but tends to be fattier.

Jack's Firehouse in Philly had it along with other none traditional plates. Had it there maybe 15 yrs ago. I remember it being a little tough but indistinguishable in taste. Caribou was much better

Too bad if that was the same bear, I liked his youtubes. I doubt that the hunter knew it was the same one, things happen fast, see bear/shoot bear. We have a three legged bear around here that often walks around like that, I would never knowingly shoot that one. I can't explain it, but shooting that one would make me feel bad.

As to what it tastes like, I have only eaten one bear, but it was very good. I think it makes for very poor steaks and roasts, but makes for wonderful chili and sausage. The fat is much more like pork fat than beef, but the texture is more like beef. Any bear meat should be cooked well done, and a well done bear steak is going to be greasy and tough, but the chili and sausage is really quite good, that is where the fat and beefy texture really shine. You might be able to get close to it if you ground bacon fat in with beef sirloin and used that for your chili. I made scotch eggs with it that were incredible, I called the recipe "Oso Good Eggs". Yeah, nobody hear appreciated the pun either. Got a couple eye rolls and a "keep your day job" comments. Still, the eggs were really good. Also made a bear sausage stuffed turkey for Christmas that everyone loved and devoured, and these are all NY relatives who had never eaten any kind of wild game before. I can imagine that a 700 or 800 lb bear would be a lot tougher, and might not be as tasty.

smoked bear ham also very good.

I would not have knowing shot that bear myself. but it was a bear and was apparently a legal shot.

Do you smoke the whole ham bone in? I may have to try that if I kill one this year.
