I never knew... cousin told me the 'cheeks' were the best part of a "whole smoked salmon". Smoked salmon is a regular part of many holiday/festive gatherings in my part of the world so I am going to the front of the buffet line when I see the chance...beef tongue is another delicacy along with pork cheek... there's probably a lot of things that are delicious if we didn't know what the source was, except liver, liver is evil no matter what, even with fava beans.. ...
