I learned a lot academically. We certainly thought we were a step up from NMH But like any school, about 20% were people you would not like. There are a handful I still keep up with though. But their kitchen's rendition of New England Boiled Dinner was pretty sad. Unfortunately, that's all the perspective I've got.

Deerfield's "chef" for a long time is/was the ex-husband of a friend of mine from college. According to her, he couldn't boil water w/o a recipe book. Addicted to gambling and amphetamines his main goal for any given day was having his numbers hit, and scoring some crank.... If he had to show up at work for that to happen, that's what he'd do.
He was probably after your time though... I think he started there around 1988, and left a few years ago.

LOL! I know the type. I graduated in 78 so I was long gone. He was there a long time considering his lack of talent. Are you a chef? You've made a couple of references to knowing some chefs, so just curious

Not a chef by any means. I dated a few, and was a fan of Julia Childs TV show. I lived near Jaques Pepin, who often was a guest at mutual acquaintances parties, and he and I often had brief banter about nothing, except our love of sailing and a proper raclette. (He's quite a fun individual.)

I was first introduced to salt beef boiled dinner working on a trawler crewed by Newfs thirty years ago.
Have not made it since I have been married with kids. Then during a 14 day quarantine with my three younger daughters, we started reading the Little House on the Prairie series. Crazy things happen when you are stuck alone homeschooling three kids, 5, 7, and 9, Little House was not one of them. Anyhoo, the kids pick up on the delight of Laura and Mary when they get salt pork for dinner. Always trying to broaden their horizons, I pick up a few packs of salt pork and made a boiled dinner. The kids ate it up! Luckily we did not all sleep in the same room like in the books! Boiled dinner, I am guessing the cabbage, is a gassy affair.

My Dad was very involved with the Corpus Christi PBS station and we used to love his show. One year for Christmas he gave me a two volume set of fairly simple recipes. We still use his baked rice recipe. He seems like he would be a great guy off camera as well. Charming. I didn't realize he loved sailing also
