I worked in Geneva for a bit. I don’t remember those. They might be more for export. Dunno.

But the Swiss were/are way into chocolate and it was common at the supermarkets to find an entire aisle of just chocolate bricks. I’d never seen bricks in the US. OK, I never really looked. That was until Trader Joe’s started carrying them.

My chocolate tastes are pretty basic but by chance I did see two talks at Xerox PARC (same place that Steve Jobs stole the Mac interface from) on chocolate, one by Ted Tcho who took a very Silicon Valley approach and the other by Scharffenberger who took an artisan approach.

Scharffenberger had an interesting point in his talk. He’d been a vintner first and recognized the similarity of wine and chocolate. Both are fermented.

Tcho had interesting observations about people’s tastes and designing chocolates for what people actually like.

Both made pretty good chocolate but that’s coming from someone who detests super dark chocolate aiming for some painful authenticity. Yuck. But I love Mexican chocolate ice cream.

My in law just ruined my fun so let me pass it along.

Dark chocolate has heavy metals and should be avoided. Even the "safe" brands seem to have enough that consuming chocolate in the quantities that I do is not a good idea.

I like my dark chocolate as much, or more, than the next guy. I found it strange that Consumers Reports did not test the Swiss Delice sold at Costco since I would imagine it is a major brand overall. Anyway, I was curious and sent Costco an email and got this reply.

"In response to your email, ... the message that vendor send us : 'We confirm that the European and Swiss requirements for heavy metals are met. Our raw material suppliers also confirm this in the signed raw material specification. Further more, analysis on heavy metals are done on the raw material, e.g. regular monitoring of cocoa beans on following parameters: cadmium, lead, mercury."

How amazing and unexpected, chocolate in Mecca, I mean PARC! I haven't done it yet, but before I die I will do my Hajj and visit this holy place. Jobs' account of that historic visit is striking.

Interesting, I prefer dark chocolates, including the super dark 85% cocoa. I also like my coffee black, strong and unsweetened, preferably an espresso or made from a moka. I wonder if there is a correlation.

I would be interested to hear what a chocolate fundamentalist enjoys (maybe as a general anarchy topic to not derail Ukraine any further).

I am just a simple brute. I like my chocolate neat and with a minimum of 70% cocoa - no contaminants like nuts, dried fruit, mint, pepper, etc. And I can't feel any difference between brands, region of origin, or artisanal chocolate. I just take what is available, and almost every time I like it. :)

Note, however, that while I don't like anything mixed in my chocolate, I do like chocolate mixed in other things!

I would never refuse a brigadeiro or an After Eight. :LOL:
