What could cause a yacht like this to acquire a hole so big to be unfloatabe?

IIRC, at least one Ericson recently sank in a marina due to a cheap plastic sink tailpiece below the waterline. Though they were able to pump it out before it submerged completely. (It has come to my attention that my "new" J-boat has several cheap plastic sink fittings below the waterline...)

Another potentially relevant thing that I and others experienced was the anchor chain getting hooked around the back of the Ericson keel, and eroding a big "shark bite" into the thin trailing edge. On my boat, it did not actually penetrate through to the hollow part of the keel. (And in fact, if it had, the "hollow" part had been back-filled by a PO with additional ballast.)

If you ever read Webb Chiles book about trying to sail his Ericson 37 around the world, or if you remember when the Ericson 46 Chiquita sank, you will know that these boats have a potentially fatal problem: they were laid up in two halves, and then glassed together down the centerline on the inside, a very sharp inside angle along the bottom and aft edge of the keel. Those centerline laminations were prone to failure resulting in a long crack and water coming up all around the ballast. They looked perfect from the inside, but shoddy workmanship was completely hidden from later inspection.
IIRC the sinking off Florida was a suicide attempt...

One pump could keep up with a failed thru hull, much less two or more.

Unless, as is likely, there was the usual clutter inside the boat that kept clogging the pumps, and the story does not mention that part.
I'm not so sure about that. Take a look at the US Navy Salvors' tables: a 2 inch hole 2 feet below waterline lets water in at 111 gallons per minute, or 6,600 gallons per hour.

A smallish ~5hp gasoline emergency pump can pump over 12,000gph so depending on the circumstances, I think something could be worked out. My club has a Honda/North Star "trash pump" which we have used to save a couple of boats that had their engine cooling intake freeze or corrode off. You have to minimize the head and lay the hoses out so they don't kink, plus have a rescue ranger guy willing to splash around under water to close the valve once it gets pumped down enough.

So wait for low tide, screw on a plywood patch with a heap of goop and pump her out?
The oysters are 6" deep on the hull, they will need chipping off around the area first.

A shame to see such a beautiful boat abandoned for such an easy fix
Old, broke and boats don't mix well.

Ah, something new to post in front of the urinals at my yacht club. Thank you!

Them's some terrifying numbers....
... and that's just on the surface. When you get down to submarine depths, a half-inch hole (or a broken half-inch pipe) can emit a stream of water that will pretty much cut a person in half.

I would guess a long history of corrosives in the holding tank ate that thru hull, HT thru hulls are usually pretty low and have the most pressure on them.

If there is a lot of growth on the hull chances are good that the bilge pump thru hull is plugged too. Combine that with a low battery and this happens.

I keep one of those 2' drain cleaners that is like a zip tie with barbs up & down it to keep my thru hulls clear - a surprising amount of crap grows & accumulates in there.

yeah sorry about that, I do feel for these guys. they're not in a good spot.
Australia is a country where growing old without owning land is not a viable option
Well, if you are a boomer and you don't own your own home in Australia, then either you gave it to your ex wife, poured all your money into the pokies and the local pubs till or you are a generational loser. That shitbox sank because of lack of maintenance. Every creek in the country has a few of these.
Why is a live-a-board shitbox sinking at its mooring even newsworthy?

really?

Weekly pension up to $800 for a couple. You can rent a two bedroom apartment in Cairns for less than $500/wk, 1 bedroom for less than $300.

Health services - mostly free or low cost.
I was going to call BS on the $800 a week couple amount. Googled it and F-me it's pretty much right. Not bad for doing nothing.
