The Potato Salad from the German Delies around where I lived usually offered two kinds. A traditional German that was had a light amount of mayo, onion, seasoning and the potatoes were cut into chunks, skin left on. The Long Island potato salad was a whole heaping of mayo, very lightly seasoned, some fresh parsley to garnish with the potatoes being de-skined and thinly sliced, like 1/8" slices. Come to think of it, the slices were always round and smallish, like 1 to 1 1/2" in diameter. Perhaps they only used spring potatoes. Good shit though.

Also Elle, you might look into oysters and clams. Long Island harvests a whole ton of shellfish.
The German salad usually had bacon bits and vinegar as I recall. No mayo.

Can you even find a potato farm anymore? would imagine they are all strip malls, condos, and vineyards now.
they're between the strip malls and mansions.
